Guilt-Free Super Bowl Eats
In all honesty I'm not much of a football enthusiast. I know, surprise, surprise. I don't really know the rules, the teams, where they come from and as for the players, unless you are spank-bank worthy and/or have had relations with a VS Angel or a Kardashian you really aren't relevant in my world. What I do know is I greatly enjoy eating, drinking, talking shit, getting together with my circle of ridiculous friends and also watching Cam Newton run around in skintight leggings. Also, if Beyonce is making an appearance anywhere I'm tuning in. Thus, this years Super Bowl party is just another excuse for this desperate WestCoastWife to partake in some bad behavior.
We all know Super Bowl food contains the four food groups: sour cream, cheese, bacon, and bbq sauce. Trust me i enjoy all of these elements but when your amidst a chili dog, potato skin overload sometimes a little fresh fare can feel like you're cutting the fat.
Garbanzo Caprese Salad
Ingredients: (6 servings)
- Can of garbanzos rinsed
- 1 large Avocado
- 2 cups cherry or mini heirloom tomatoes
- 2 small cloves garlic finely chopped
- 1 cup basil chiffonade (this means cut into thin ribbons)
- 2 tbsp shredded Parmesan
- 1 tbsp olive oil
- 1 tbsp red wine vinegar
- pinch of salt to taste
Directions:
Throw all of this into a bowl, gently mix and serve. Yup, it is that easy.
I like serving this as a side, on sliced baguette like a bruschetta, or sometimes atop arugula to turn into a greener salad. I promise you this is super tasty , healthy and incredibly simple to make.
